Munching on the 3 point snack instead of the 15+ point snack worked! Crisis averted without falling off the "wagon".........whew!
I was afraid of the temptation to resort to an our usual pattern of "take out" on nights that I work late, so I made "Crock Pot Cream Cheese Chicken Chili" for dinner tonight. 1 serving is 7 weight watchers points and it is very yummy & filling too......I couldn't even finish all of mine! I have plenty left over for lunch & to possibly freeze too. Here's the recipe.
Crockpot Cream Cheese Chicken Chili
1 package of boneless skinless chicken breasts
1 can Rotel tomatoes
1 can corn kernels, do not drain (I bought white corn)
1 can black beans, do not drain (I bought low sodium)
1 pkg. dry ranch dressing mix
1 Tbsp cumin
1 tsp. chili powder
1 tsp. onion powder
8 oz. package cream cheese (I bought the 1/3 less fat-Neufchatel cheese
Put the chicken in the crock pot. Top with tomatoes, corn, the drained & rinsed beans, ranch dressing, cumin, onion, and chili powder. Stir to combine & cook on low for 4-6 hours (6-8 if chicken is frozen) 30 min. prior to eating add cream cheese & stir every 5-10 minutes. Shred the chicken into large pieces. (Can also serve in tortillas, taco shells, or over rice)
