Day 9

 When I walked in the door tonight after 6:00...........stressed, tired, and starving.....the first thing I thought was........FOOD!  All my "favorite's" were calling my name............cheese puffs, cake, chips......uggh!  Before I caved, I got out my phone & looked at my WW points tracker for the day......after accounting points for dinner, I had 6 of my daily points left.  Instead of scarfing my face with cheese puffs or cake, I decided to munch on a few veggie sticks to get me by until dinner. 

Munching on the 3 point snack instead of the 15+ point snack worked!  Crisis averted without falling off the "wagon".........whew!
I was afraid of the temptation to resort to an our usual pattern of "take out" on nights that I work late, so I made "Crock Pot Cream Cheese Chicken Chili" for dinner tonight.  1 serving is 7 weight watchers points and it is very yummy & filling too......I couldn't even finish all of mine!  I have plenty left over for lunch & to possibly freeze too.  Here's the recipe.
Crockpot Cream Cheese Chicken Chili

1 package of boneless skinless chicken breasts
1 can Rotel tomatoes
1 can corn kernels, do not drain (I bought white corn)
1 can black beans, do not drain (I bought low sodium)
1 pkg. dry ranch dressing mix
1 Tbsp cumin
1 tsp. chili powder
1 tsp. onion powder
 8 oz. package cream cheese (I bought the 1/3 less fat-Neufchatel cheese

Put the chicken in the crock pot.  Top with tomatoes, corn, the drained & rinsed beans, ranch dressing, cumin, onion, and chili powder.  Stir to combine & cook on low for 4-6 hours (6-8 if chicken is frozen)  30 min. prior to eating add cream cheese & stir every 5-10 minutes.  Shred the chicken into large pieces.  (Can also serve in tortillas, taco shells, or over rice)


I've used the "I'm too busy excuse" for the past year and a half or so and as a result, I've put on about 30 extra pounds. (on top of what I was already trying to lose)  Yes, I'm busy........but so are many healthy, fit, and BUSIER people than me........it takes lots of planning, preparation, motivation......but this week has shown me that it IS possible.......the WW weigh in tomorrow will tell me if it has worked!  (I'll be very happy with a 2 lb. loss.........we'll see!)  Everything 4:13!
